MEET the family team which has taken over the running of the new-look Pilot Boat in Lyme Regis – Robin and Angela Collyns and their son Ben.
Robin and Angela are the recently appointed licensees of the Palmers Brewery pub and restaurant, son Ben is the general manager responsible for customer service and daughter Ellie works as a general assistant.
Mr and Mrs Collyns say they are delighted with the response after just a couple of weeks trading after the pub was closed for several months for the extensive refurbishment, the result of a significant investment by the Bridport-based brewery.
Mr and Mrs Collyns and the family come to Lyme Regis with extensive experience in the hospitality trade. Before taking over the Pilot Boat the couple, who met when they both worked for Berni Inns in the 1980s, ran the City Gate Hotel in Exeter and before that The Godolphin Arms in Marazion in Cornwall.
With the front part of the building retaining its pub atmosphere, the former ‘Inn Plaice’ and back bar at the Pilot has been converted into an ultra-modern bar and restaurant with an open air terrace seating 60. In all the establishment offers seating for around 185 diners for meals throughout the day, including breakfast.
Mrs Collyns said the Californian-style service was proving very popular with customers but they were keen to seek advice and suggestions from all those visiting the pub.
The Pilot also has three well appointed bedrooms, one overlooking the sea, which becomes available this weekend.
About 50 staff are currently being employed at the Pilot, 20 of which will be permanent, with some of them being accommodated at the former Angel Inn in Mill Green which has been converted into staff quarters by Palmers.
The style of the Pilot Boat does not lend itself to catering for functions, although small groups can be accommodated for meetings.
Mr and Mrs Collyns are keen to immerse themselves into the community life of Lyme Regis and have already recognised what a popular and vibrant the town it is with a growing reputation for high-quality food outlets.
