Meet the new head chef at HIX Oyster & Fish House

IT’S long hours and sometimes highly stressful, but Jeremy Bird is passionate about cooking and that passion was clearly recognised by Mark Hix when he was promoted to head chef after working in the kitchen at the Oyster & Fish House for four years.

Jeremy, 32, hails from Warwickshire but after attending university in Plymouth he has spent most of life in the West Country.

After school, Jeremy took a gap year not knowing what he really wanted to do with his life and whilst in Australia took a job in a kitchen.

Back in the UK, Jeremy enrolled at one of the UK’s top cookery schools in Ashburton, where he was living, and was taught by professional chefs, most of whom had experience of Michelin kitchens.

It was an intense six-month course covering all aspects of the restaurant world and Jeremy emerged with a Professional Culinary Diploma, firm in the knowledge that being a chef was what he wanted to do.

His first job as a commis chef was at the famous Soho restaurant and members’ club Quo Vadis where he found life in a professional kitchen, working under head chef Jeremy Lee a far cry from cookery school, describing the experience as “quite an eye-opener”.

Jeremy than saw an advertisement on the HIX website inviting chefs to meet with Mark to discuss possible opportunities at his five restaurants.

He was engaged on a trial period to work at two of Mark’s London restaurants, Tramshed and Chop House, under the guidance of one of Mark’s executive chef at the time, and was then asked if he fancied working at the Oyster & Fish House in Lyme.

Jeremy jumped at the chance and hasn’t looked back since, being promoted to head chef in February of this year. Jeremy lives in Axminster with his partner Aimee, who is also working for Hix in Lyme.

This is the spectacle that greets diners as they walk through the public gardens to the restaurant, which commands fabulous views over the harbour and Lyme Bay, making it one of the best venues in the UK.
